When I was finally diagnosed nearly 15 years ago, the term gluten free diet was almost novel. Today, a diet that avoids gluten has become popular. Yet, here in America for 3 million of us this is not a new fad. It is a way of life. Why? We suffer from Celiac disease, dermatitis herpetiformis or gluten intolerance.

We know that maintaing a gluten free lifestyle is important as gluten is toxic to our bodies. So what is gluten anyways? Gluten is a storage protein called a prolamin. It exists in many grains such as barley – in the form of hordein, in rye – as secalin, and, of course, in wheat as gliadin. Wheat is a common ingredient of many food products including the bread we eat, the beer we drink and such delicious treats as cakes, cookies, pastas, pies and muffins. Through a process called cross contamination, gluten also makes its way into other food. It even can be found in the ingredients that add flavor and taste to our food – spices.

Even Spices?

Yes, it is true. Spices do not originally contain gluten. Contamination occurs when they come into contact with it or a product containing gluten in a facility that utilizes ingredients such as flours as a filler.
